‘The Cuisine of the Irevan Khanate’ is the product of many years of research, focusing on a topic considered very relevant and important today, both from a historicalethnographic and national-spiritual perspective. This is the comprehensive study of the ancient culinary culture of the Irevan Azerbaijanis and, in general, those Azerbaijanis who were once residents in the territory of the state now called ‘Armenia’. The book comprises numerous historicalethnographic facts that relate to Irevan cuisine and that of Western Azerbaijan in general, thereby demonstrating the antiquity and richness of the material culture created by the indigenous population of that region and their continued provenance over the territory.
