‘The Cuisine of the Irevan Khanate’ is the product of many years of research, focusing on a topic considered very relevant and important today, both from a historicalethnographic and national-spiritual perspective. This is the comprehensive study of the ancient culinary culture of the Irevan Azerbaijanis and, in general, those Azerbaijanis who were once residents in the territory of the state now called ‘Armenia’.
